Một lọ hành củ muối chua ngọt thường là món ăn được nhiều gia đình chuẩn bị ăn kèm trong mâm cơm ngảy Tết và những bửa cơm gia đình thường ngảy để mâm cơm thêm đậm đà. Có nhiều kiểu muối hành như muối chua, muối ngọt, muối cay,.... nhưng kiểu muối chua ngọt bằng giấm và đường vẫn được nhiều người ưa thích.
Đâu tiên mua hành củ về tước bớt lớp vỏ ngoài và phơi ngoài nắng cho tái.
Ngâm hành củ vào nước vo gạo qua đêm. Việc ngâm kiệu như thế này sẽ giúp bớt đi mùi hăng của hành.
Sau khi ngâm tầm 10 phút thì đổ ra xả sạch với nước rồi cắt bỏ rễ hành, làm sạch hành xong bạn cho vào âu thêm 2 thìa súp muối hạt, xóc đều, để chừng 3 tiếng
Rửa sạch hành với nước sau đó lại ngâm tiếp 1 lần nước vo gạo nữa. Sau đó rửa lại với nước rồi để cho hành thật ráo.
Cho vào nồi 150ml nước, 30ml giấm gạo, 2 thìa súp muối. Đun sôi thì để thật nguội.
Hũ muối hành chần qua nước sôi rồi để ráo. Sau đó xếp hành vào hũ sành hoặc thuỷ tinh, thêm vài lát ớt vào rồi đổ nước giấm đã đun vào. Dùng vật nặng chèn xuống cho hành ngập nước. Khi dùng bạn nhớ dùng đũa sạch để gấp hành ra rồi đậy lại thật kín nhé. Chúc các bạn thành công.
